Restaurant Certification ResourcesCase Studies and References for Group Project Restaurant Certification: http://konsortium.typepad.com/konsortium/2007/06/green-restauran.html The Green Restaurant Association (GRA) is a non-profit organization in the U.S. that guide restaurants to becoming more sustainable or "green". By setting standards in 11 categories the GRA makes it comprehensive and feasible for restaurants to become more environmentally friendly. The standards include being more energy efficient (energy efficient appliances and the use of alternative energy), water conservation, recycling, organic local food, sustainable products (containers and utensils as well as cleaning products), pollution prevention, green building, and education. The GRA's list so far includes 122 restaurants and lists how many steps each restaurant has taken on their website. http://www.greenmycuisine.com/about.php The Green Restaurant Program has started a local green restaurant certification program in the Bay Area which requires restaurants to comply with all environmental standards and regulations and additionally has a list very similar to the GRA standards that help restaurants reduce their carbon footprint – reducing their energy consumption, having an efficient recycling program, reducing pollution etc. Standards actually vary from city to city. Once restaurants comply, they have to be inspected by regulatory agencies and the Bay Area Green Business Program. |
